    Roasted Orange Glazed Carrots with Ginger (Vegan, Gluten-Free & Easy Side Dish)

    Simple ingredients and bold flavors come together in these easy Roasted Orange Glazed Carrots with Ginger. Oven roasting brings out the carrots’ natural sweetness and amazing texture, while fresh orange juice, fragrant zest, and warming ginger create a bright, citrusy glaze—no refined sugar needed. The result is a light yet flavorful vegetable side dish that feels elegant enough for the holidays and easy enough for a weeknight or Sunday dinner.

    Naturally vegan, vegetarian, and gluten-free, this carrot recipe uses just a handful of wholesome ingredients (only 4, not including pantry staples!) and comes together with minimal effort. Whether you’re planning a festive holiday spread or looking for a healthy roasted vegetable to round out your meal, these orange glazed carrots are a colorful, crowd-pleasing addition to the table.

    Pick out small tender carrots of any color, such as these I found at the farmers market.

     

    The next time you get a bunch of small tender carrots with tops, make this easy four ingredient recipe for orange glazed carrots and you will return to it time and time again. I use maple syrup in the recipe, but you can also omit it. I like to use heirloom, multi-colored carrots in this recipe, but you can also use traditional orange carrots. The secret is to find small carrots, if you can. Roasted carrots are the perfect budget-friendly, family-friendly (kids love them!) vegetable side dish for every occasion.     I used oranges from my small orchard. Just use the zest and juice from one medium fresh orange.

    Description

    These roasted orange glazed carrots are naturally sweetened with fresh orange juice, ginger, and orange zest. A light, healthy vegan side dish perfect for holiday meals, Sunday dinners, and everyday cooking.


    • 1 1/2 pound small whole fresh carrots, with tops (may use heirloom, multi-colored carrots or orange carrots)
    • 2 tablespoons extra virgin olive oil
    • 2 small oranges, juiced and zested (1/2 cup juice + 1 tablespoon zest)
    • 2 teaspoons fresh minced ginger
    • 2 tablespoons maple syrup (optional)
    • 1/4 teaspoon salt (optional)
    • 1/4 teaspoon black pepper


    Instructions

    1. Preheat oven to 375 F.
    2. Scrub carrots with a vegetable brush (don’t peel) and trim tops, leaving about ½ inch of tops on carrots.
    3. Place carrots in a 13 X 9-inch baking dish.
    4. Drizzle with olive oil and toss with tongs to evenly coat carrots. Place in oven and roast uncovered for 20 minutes, stirring half way through.
    5. While carrots are roasting, whisk together orange juice and zest, ginger, maple syrup (optional), salt (optional), and black pepper in a small bowl.
    6. When carrots have roasted in olive oil for 20 minutes, remove from the oven, pour the orange ginger sauce over the carrots, and toss with tongs to distribute. Return to oven and roast uncovered for an additional 15-20 minutes, stirring with tongs every 5 minutes, until tender and golden on surface. Texture should be firm on the outside, but tender when pierced with a fork.
    7. Makes 6 servings.
